BRITISH cookery has been much maligned and has improved dramatically in the restaurants and country inns in the past decade. Traditional British cuisine is substantial, yet simple and wholesome. The Brits have long believed in four meals a day.

If you like the oriental, many restaurants in JAPAN specialize in just one type of food. Sushi-ya are restaurants which specialize in sushi. In most sushi-ya, customers can sit either at a normal table or at a counter (sushi bar), behind which the sushi chef is working. Kaiten-zushi is sushi restaurants, where the sushi dishes are presented to the customers on a conveyor belt. Customers can then freely pick the dishes that they like or order dishes which are not available on the belt. Ramen-ya specialize in ramen dishes, Chinese style noodles served in a soup with various toppings. Every ramen-ya has developed its own soup, the most crucial ingredient for a restaurants success. Kare-ya specialize in curry rice (kareraisu) dishes. There is usually at least one kare-ya inside or around any major railway station. Tonkatsu-ya serve tonkatsu, deep fried breaded pork cutlets. Okonomiyaki-ya specialize in okonomiyaki and sometimes monjayaki. Customers are usually preparing their okonomiyaki (mixture between pancake and pizza) by themselves on a hot plate which is built into the table. Yakitori-ya specialize in yakitori, grilled chicken skewers. Sushi is the most famous Japanese dish outside of Japan, and one of the most popular dishes among the Japanese themselves. During the Edo period, "sushi" refered to pickled fish conserved in vinegar. Nowadays sushi can be defined as a dish containing rice which has been prepared with sushi vinegar. Some popular ones are: Nigiri Small rice balls with fish, etc. on top. Gunkan Small cups made of sushi rice and dried seaweed filled with seafood Norimaki Sushi rice and seafood, etc. rolled in dried seaweed sheets, Temaki Temakizushi (literally: hand rolls) are cones made of nori seaweed and filled with sushi rice, seafood and vegetables. Oshizushi Oshizushi is pressed sushi, in which the fish is pressed onto the sushi rice in a wooden box. Inari Inarizushi is a simple and inexpensive type of sushi, in which sushi rice is filled into aburaage (deep fried tofu) bags. Chirashi Chirashizushi is a dish in which seafood, mushroom and vegetables are spread over sushi rice. Rice is Japan's most important crop, and has been cultivated by the Japanese for over 2000 years. Its fundamental importance to the country and its culture is reflected by the facts that rice was once used as a currency, and that the Japanese word for cooked rice (gohan) has also the general meaning of "meal". The literal meaning of breakfast (asagohan), for example, is "morning rice". Rice is processed into various products and prepared in many different ways.
